Polyglutamic acid, found in the traditional food natto, is a sticky anionic polymer of amino acids, commonly known as γ- Polyglutamic acid. The polymer is based on glutamic acid as the structural unit α– Amino and γ- Isomorphic polypeptide biopolymers with carboxyl groups forming amide bonds. Because each structural unit of glutamic acid contains many hydrophilic groups, a large number of hydrogen bonds can be formed inside or between the polymer chains, making polyglutamic acid have good water absorption and water retention, and become a good water retention component, which is widely used in cosmetics.
